Rice Kheer-Paramannam

Kheer is a very popular sweet dish/desserts in india.It is a traditional dish prepared in india during festivals,special occasions or as an offering to the Gods.This Kheer can be made with rice or vermicelli.This creamy sweet dish is easy to prepare and tastes very good either hot or cold and yummy with dry fruits garnishing.


1 cup rice(best to use basmati rice)
3 cups whole milk
1 cup condensed milk
1/2 cup sugar
1 tbsp rasins
1 tbsp cashewnuts
2 tbsp badam/almonds(blanched)
1 tbsp powdered cardamom(elaichi)
1 tbsp ghee  for frying cashewnuts and raisins


Wash and drain the rice.
In a pan heat the ghee and roast the cashewnuts and raisins for 1-2 mins and keep it aside.
In a thick bottommed pan put the milk,condensed milk to boil.When milk is boiling add rice to it and cook on a medium flame till the rice is cooked.
Add sugar,cardamom,raisins,almonds to the mixture and stir well till the mixture thickens.
Turn off the fire and serve hot or allow it to cool and refrigrate and serve cold.
